Preparation

- Ingredients
1 tablespoon olive
oil or rapeseed oil
2 spring onions, sliced
225g/9oz lamb's liver, cut into thin strips
1 clove garlic, crushed
1/4 red pepper, remove seeds and cut into strips
1/4 yellow or orange pepper, remove seeds and cut into strips
1 tablespoon half-fat crème fraîche
Black pepper to taste

Heat the oil in a large non-stick
pan
Fry onions quickly for 1 minute
Add liver, garlic and peppers and stir fry for 3 minutes (be
careful not to overcook liver, as it goes tough)
Stir in the half-fat crème fraîche
Season with black pepper
Serve straight away with rice or noodles to add carbohydrate*
*SERVE with rice, chunk of
bread, cous-cous, pasta, jacket potato, noodles and cucumber/tomato
