"Stir fry Lamb's Liver with peppers"
Serves 2

Preparation & Cooking Time: 10 minutes

  • Ingredients
    1 tablespoon olive oil or rapeseed oil
    2 spring onions, sliced
    225g/9oz lamb's liver, cut into thin strips
    1 clove garlic, crushed
    1/4 red pepper, remove seeds and cut into strips
    1/4 yellow or orange pepper, remove seeds and cut into strips
    1 tablespoon half-fat crème fraîche
    Black pepper to taste

Heat the oil in a large non-stick pan
Fry onions quickly for 1 minute
Add liver, garlic and peppers and stir fry for 3 minutes (be careful not to overcook liver, as it goes tough)
Stir in the half-fat crème fraîche
Season with black pepper
Serve straight away with rice or noodles to add carbohydrate*

*SERVE with rice, chunk of bread, cous-cous, pasta, jacket potato, noodles and cucumber/tomato salad

Honeyed Liver - Serves 2

Preparation and Cooking Time: 25 minutes

  • Ingredients
    2 slices calf's liver (about 175g/6oz each and 1cm/1/2 inch thick)
    Plain flour for dusting
    1 tablespoons olive oil or rapeseed oil
    1 tablespoon butter
    1 tablespoon red wine vinegar, sherry vinegar or raspberry vinegar
    1 teaspoon soy sauce
    1 tablespoon water
    1/2 tablespoon clear honey
    Black pepper to taste

Season both sides of the liver with black pepper
Dust the slices lightly with the flour, shaking off excess
Heat the oil in non-stick frying pan
Add the liver slices to the hot oil and cook for 1-2 minutes until brown on one side, then turn and cook for a further 1 minute (careful not to overcook as meat with toughen)
Transfer to warmed plates and keep warm
To the frying pan, add the vinegar, soy sauce, water and honey. Bring to boil and whilst stirring, add the butter until melted and smooth.
Spoon sauce over the liver and serve with source of carbohydrate*

*SERVE with chunk of bread or potatoes and salad
